Avoid dark chocolate from cocoa strains with high caffeine.
The Forastero strain contains virtually no caffeine, while the Criollo contains a lot of caffeine. The cocoa strains are not often declared in the ingredients on baking chocolate, so it's better to mix cocoa solids with specified strain with white chocolate. Stimulants (caffeine) combined with psychedelics should be used with caution. Please see this section for the difference of caffeine content in cocoa strains.
